It’s perfectly acceptable to sit out a few hands to become acclimated - and we highly recommend that you do so, especially if you've chosen cash games and haven't first spent some time at the site's play-money tables.

Just remember that if you do sit out, you'll have only a short time - generally limited to ten minutes or a couple of rounds - before being removed from the table. As a courtesy to other players, don't take a seat if you wish to observe the games longer than that before playing.
